German 8 inch F.Dick just sharpened and ready for use

I usually use the 10 inch F.Dick but I haven’t used this maybe twice since I got it 7 or 8 yrs ago so I decided to dig her out of the Closet of knives and break out the Nubatama’s today plus my finishing stone and give her a great edge that will handle just about anything. Turned out well and it was all freehand of course, I’ll let you be the judge. Our sharpening shop will be doing more now since I will have more time in the future so send em all and they will be treated as well as mine and the end product should make you happy.  If you want a kydex saya so you can safety put the knife in your Drawer if that’s where you keep it.

Sometimes it’s just good to go French, back to the culinary cooking roots we know today.

Yes I bleed Maestro Wu orange, and will hopefully do so the rest of our family’s knife. (Box is orange except on MA series) occasionally I love to open my Closet par knives full of several blocks, racks and kydex sheathed chef knives. I have accumulated many in 20 years and sold some I should of and some I regret, besides the Sabatier this is my favorite Chef knife, the Le Theirs par Chambriard 30 cm chef knife. Like the Maestro Wu’s these are hand made and sharpen up beautifully but can easily be over sharpened if your using a fast cutting stones. Naturals from Japan or Belgium including the rare German Escher stone work wonders on these but today I decided to go with synthetics to speed it up and I have a pork tenderloin I will be cutting later and may or may not film it going through the tender piece of pig heaven. I will probably use the G-8 Maestro Wu I used at thanksgiving or the D-7 9.5 inch chef. All of these mentioned except the Le Theirs par Chambriard, this is my last ebony one I have. Maestro Wu D-7 8.5 inch chef knife, the perfect one

I’ve owned or own pretty near ever brand of chef knife out there and I won’t lie the 9-10 inchers are my favorite, now don’t get me wrong my D-9 and G-8 are two of my favorites along with the Globals, Messermeister Mu’s black handle, Wusthof Ikons and my favorite German Knives the F.Dick 1905 and the jubilee which I only touched once it’s way out of my price range not to mention the Hattori’s the Kikuchi’s, Mac’s, JCK’S, and the great Le Theirs par Chambriard (best French knife ever made hands down) along with the Numerous Sabatiers along with my beloved Boker Damask VG10 and Shuns.  The Maestro Wu’s IMOP will keep up or beat each and every one of these along with edge retention that WILL beat each listed and the variety of professional Chef or our Cleavers that have never been equaled including our Chan or Asian Slicers that also come in many sizes and just like the rest of the Maestro Wu’s Dam near indestructible within or slightly above regular standards and I’m just referring to the kitchen knives and Cleaver I haven’t touched on the pocket knives or the tactical ones but here’s the D-7 8.5 inch I just freehand sharpened on Japanese Whetstones to a very sharp edge I go so far to say stunning.  Mail in sharpening always welcomed and greatly appreciated so much, I love it when people feel a real old style edge like the samurai did so many years ago, and quite similar to how I sharpen. The D-9 Maestro Wu and the G-8 Maestro Wu, it’s praises can’t be sung enough.

This or let me say these two one which just pictured is leaving my house to a happy home the D-9 to a chef in the state of Kansas. These two chef knives even though look like there’s no way they can be considered chef knifes haven’t used it or seen the praises sung by Chef Chris Bruce and California’s own Chef Michael Bartley from Oregano Fresh Greek Restaurant.  Here’s some pics of the western handled D-7 and Nostalgic wood handled G-8. Change or die! Maestro Wu’s newer line is a hit!

These have been around for awhile now, but get less respect than deserved. There is 4 models in the Maestro Wu MA series and every one is a winner as with any knife as long as it’s is properly sharpened, either freehand like myself with just stone, water, hands, and a towel.
